In Silico Comparative Genomic Analysis Revealed a Highly Conserved Proteolytic System in Lactobacillus delbrueckii

Lactobacillus delbrueckii, the type species of genus Lactobacillus, is widely recognized as primary starter culture in dairy industry due to its proteolytic activity, which enables it growth milk. In this study, a comprehensive genomic analysis system was conducted on L. delbrueckii strains. The included 27 genomes with specific focus key enzyme involved system, cell envelope-associated proteinase (CEP). amino acid sequences, well protein-structure prediction CEPs, were compared. Additionally, syntenic locus related CEPs revealed high conservation subsp. bulgaricus strains, while lactis strains exhibited greater variability, including presence insertion deletions, and rearrangements. Finally, CEP promoter region putative regulatory elements responsible for controlling expression lactobacilli investigated. Our silico characterization contribute our understanding activity potential applications these lactic bacteria industry. Further research area will expand knowledge practical uses findings.
